Hot pepper jelly is a classic product from the Caribbean, made from red peppers and chillies, a sweet, fiery variety called scotch bonnets

All have a piquant touch of chilli, but are not too hot, unless you try the "very or extremely hot" varieties. These wonderfully exotic recipes are made by hand in Essex, in small batches in open pans

All the jellies/chutneys are a perfect accompaniment to hot or cold meat, game or poultry and are especially good with cheese or in sandwiches
